Sour Cream Raisin Meringue Pie


A surprise pie. The rich, spicy filling is topped with a brown sugar meringue.

  1. Bake pie shell.
  2. Heat oven to 400 degrees.
  3. Blend cornstarch, sugar, salt and nutmeg in saucepan.
  4. Blend in sour cream.
  5. Stir in egg yolks, raisins and lemon juice.
  6. Cook over medium heat, stirring constantly, until mixture thickens and boils.
  7. Boil and stir 1 minute.
  8. Immediately pour into baked pie shell.
  9. Heap meringue onto hot pie filling; spread over filling, carefully sealing meringue to edge of crust to prevent shrinking or weeping.
  10. Bake about 10 minutes or until light brown.
  11. Cool away from draft.
