A surprise pie. The rich, spicy filling is topped with a brown sugar meringue.
Ingredients
- 9-inch Baked Pie Shell
- 1½ tablespoons cornstarch
- 1 cup plus 2 tablespoons sugar
- ¼ teaspoon salt
- ¾ teaspoon nutmeg
- 1½ cups dairy sour cream
- 3 egg yolks, slightly beaten
- 1½ cups raisins
- 1 tablespoon lemon juice

Directions
- Bake pie shell.
- Heat oven to 400 degrees.
- Blend cornstarch, sugar, salt and nutmeg in saucepan.
- Blend in sour cream.
- Stir in egg yolks, raisins and lemon juice.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 minute.
- Immediately pour into baked pie shell.
- Heap meringue onto hot pie filling; spread over filling, carefully sealing meringue to edge of crust to prevent shrinking or weeping.
- Bake about 10 minutes or until light brown.
- Cool away from draft.
