Directions
- Heat oven to 275 degrees.
- Generously butter 9-inch pie pan.
- In small mixer bowl, beat 2 egg whites (¼ to ⅓ cup) and ¼ teaspoon cream of tartar until foamy.
- Beat in ½ cup sugar, 1 tablespoon at a time; continue beating until stiff and glossy.
- Do not underbeat.
- Pile into pie pan, pressing meringue up against side of pan.
- Bake 45 minutes.
- Turn off oven; leave meringue in oven with door closed 45 minutes.
- Remove from oven; finish cooling away from draft.
