Gazpacho


Ingredients

  • 1½ cups tomato juice
  • 1 beef bouillon cube or 1 teaspoon instant beef bouillon
  • 1 tomato, chopped
  • ¼ cup chopped unpared cucumber
  • 2 tablespoons chopped green pepper
  • 2 tablespoons chopped onion
  • 2 tablespoons wine vinegar
  • 1 tablespoon salad oil
  • ½ teaspoon salt
  • ½ teaspoon Worcestershire sauce
  • 3 drops red pepper sauce
  • Accompaniments

Directions

  1. Heat tomato juice to boiling.
  2. Add bouillon cube; stir until dissolved.
  3. Stir in remaining ingredients except accompaniments; chill several hours.
  4. Serve with accompaniments: herbed croutons and about ⅓ cup each chopped tomato, unpared cucumber, green pepper and onion.
