Fruit-Slice Cookies


Pretty fruit slices with the taste and tint of citrus. They have the look of their candy-store cousins but with the hearty goodness of cookies.

Ingredients

  • 1 cup butter or margarine, softened.
  • 1 cup granulated sugar
  • 2 eggs
  • 1½ teaspoons vanilla
  • 3 cups all-purpose flour*
  • 1 teaspoon salt
  • Food colors (yellow, green, red)
  • 1½ teaspoons grated lemon peel
  • 1½ teaspoons grated lime peel
  • 1½ teaspoons grated orange peel
  • Colored sugars (yellow, green, orange)

Directions

  1. Mix thoroughly butter, granulated sugar, eggs and vanilla.
  2. Blend in flour and salt.
  3. Divide dough into 4 equal parts.
  4. To one part, work in few drops yellow food color and the lemon peel.
  5. To another part, work in few drops of green food color and the lime peel.
  6. To another part, work in few drops each red and yellow food color and the orange peel.
  7. Leave remaining part plain.
  8. Cover; chill 1 hour.
  9. Shape each colored dough into roll, 2 inches in diameter and 4 inches long.
  10. Divide plain dough into 3 equal parts.
  11. Roll each part into rectangle, 6x4 inches.
  12. Wrap 1 rectangle around each roll of colored dough; press together firmly.
  13. Roll in matching colored sugar.
  14. Wrap; chill at least 4 hours.
  15. Heat oven to 400 degrees.
  16. Cut rolls into ⅛-inch slices.
  17. Place on ungreased baking sheet; cut each slice in half.
  18. Bake 6 to 8 minutes or just until set.
  19. Immediately remove from baking sheet.

*Do not use self-rising flour in this recipe.
