Dumplings


Perfect accompaniment for chicken or beef stew.

Ingredients

  • 1½ cups all-purpose flour*
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 3 tablespoons shortening
  • ¾ cup milk

Directions

  1. Measure flour, baking powder and salt into bowl.
  2. Cut in shortening thoroughly, until mixture looks like meal.
  3. Stir in milk.
  4. Drop dough by spoonfulls onto hot meat or vegetables in boiling stew. (Do not drop directly into liquid.)
  5. Cook uncovered 10 minutes.
  6. Cover; cook about 10 minutes longer or until dumplings are fluffy.

*If using self-rising flour, omit baking powder and salt.

Variations

  • Cheese Dumplings: Add ¼ cup shredded sharp cheese to flour mixture.
  • Parsley, Chive or Herb Dumplings: Add 3 tablespoons snipped parsley or chives or ½ teaspoon dried herbs (sage, celery seed or thyme) to flour mixture.
