Ranger Cookies


Ingredients

  • ½ cup shortening
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 egg
  • ½ teaspoon vanilla
  • 1 cup all-purpose flour*
  • ½ teaspoon soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup quick-cooking oats
  • 1 cup fortified whole wheat flakes cereal
  • ½ cup shredded coconut

Directions

  1. Heat over to 375°.
  2. Mix thoroughly shortening, granulated sugar, brown sugar, egg and vanilla.
  3. Stir in remaining ingredients.
  4. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet.
  5. Bake 10 minutes.
  6. Immediately remove from baking sheet.

*If using self-rising flour, omit soda, baking powder and salt. If using quick-mixing flour, mix 2 tablespoons milk into shortening mixture.
