Corn Sticks


Ingredients

  • 1½ cups cornmeal
  • ½ cup all-purpose flour*
  • 3 teaspoons baking powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon soda
  • ¼ cup shortening
  • 1½ cups buttermilk
  • 1 egg

Directions

  1. Heat oven to 450°.
  2. Grease corn stick pans; place in oven to heat.
  3. Stir together all ingredients; beat vigorously ½ minute.
  4. Fill pans ⅔ full.
  5. Bake 12 to 15 minutes or until golden brown.

*If using self-rising flour, decrease baking powder to 2 teaspoons and omit salt.
